Monks at the Jerónimos Monastery in Lisbon, Portugal are believed to have created pastel de nata in the 18th century. Monks used egg whites to starch clothes, leaving them with lots of leftover yolks. They used the yolks to create a rich custard filling for their tarts. The flaky crust is thought to have come from French patisserie techniques. The monks sold the tarts to raise money for the monastery.
